History

The story of the Bellini dates back to Venice in 1945, when Giuseppe Cipriani, the owner of the legendary Harry’s Bar, created the drink fourteen years after opening his small bar and restaurant on the edge of the Grand Canal, near St. Mark’s Square. He named it after the Italian painter Giovanni Bellini, since the cocktail’s pinkish shade reminded him of the tones in one of the artist’s works. The Bellini quickly gained worldwide fame and remains one of the most iconic sparkling cocktails to this day.

4 oz (120 ml) Prosecco or brut sparkling wine

2 oz (60 ml) peach purée (preferably made from white peaches)

How to Make a Bellini Cocktail

Blend ripe peaches until smooth to create a purée. Place ice in a champagne glass. For the best results, mix the ingredients in a jug first; if you try to combine them directly in the glass, the reaction between the fruit and the sparkling wine may cause the drink to overflow. Whichever vessel you choose, always add the purée first, then slowly pour in the Prosecco. Finally, give the mixture a gentle stir to combine.

Serving and Garnish

The Bellini is traditionally served in a champagne flute. For garnish, you may add a thin peach slice or a fresh raspberry to the rim of the glass, adding both elegance and a touch of color.
